Wished On a Star Raw Energy Bars

A simple base (almonds and buckwheat), sweets (dates, goji berries), spices (vanilla and lavender flowers), superfoods (bee pollen) and seeds (sesame) make their way into this recipe, but feel free to modify depending on the depths of ingredients in your own panty.

Ingredients

  • 1 1/2 cups dates, soaked for a few minutes beforehand
  • 1/2 cup almonds
  • 1/2 cup buckwheat groats, ground into a fine powder
  • 1/2 tsp dried lavender flowers, ground
  • 1/4 tsp vanilla powder
  • 1 tbsp goji berries
  • 1 tbsp bee pollen
  • 1 tbsp unhulled sesame seeds plus more for garnish

Instructions

Using a coffee grinder, process the buckwheat groats into a fine powder and set aside. Do the same with the lavender flowers (can process both the buckwheat and lavender together to ensure a proper texture for both).

In a food processor, grind the almonds until they are a crumbly, fine consistency. Add in the dates, almonds, buckwheat flour, lavender flowers, vanilla powder, and liquid and mix until well-combined.

Transfer mixture to a bowl and stir in the goji berries, bee pollen, and unhulled sesame seeds. Once ingredients are well-combined, press bar mixture into a 9×9 glass baking dish. Top with sesame seeds and chill for at least thirty minutes.

Cut into bars and serve, or wrap as your next holiday gift. Will keep for five days in the fridge, or a few weeks in the freezer.
