Strawberry Lemon and Dark Chocolate Balls

This recipe has 3 absolutely delectable elements: Strawberries – Oh So sweet, delicate, juicy and  yummy food for the soul; Lemon – Can’t go past that sassy refreshing tang of a lemon; and Dark Chocolate – polyphenols galore and oh so decadent. Organic, Raw, Nut Free, Gluten Free, Dairy Free, Vegan, and Refined Sugar Free!


Strawberry Lemon Balls
  • 1/2 container of Strawberries – organic and spray free if you can – you’ll get the sweetest taste ever.
  • 1.5 cups of shredded coconut (shredded finely)
  • 1.5 cups of coconut (shredded finely)
  • 3/4 cup flax meal
  • 1/2 cup lemon juice and zest of those lemons
Dark Chocolate
  • 1/2 cup cacao butter melted
  • 1/4 cup coconut oil melted
  • 1/2 cup cacao powder
  • 1/3 cup Maple Syrup
  • pinch of salt and a dash of vanilla


Strawberry Lemon Balls
  1. Combine all wet ingredients in the food processor, transfer to a bowl and combine your dry ingredients.
Dark Chocolate (Use a double boiler method)
  1. blend in a food processor until combined, think and creamy!
  2. Add more coconut if your strawberries are super juicy. But remember flax meal will absorb moisture, so wait a minute or so.
  3. Chuck em in the fridge to chill.
