Raw Swedish Dill Cucumber

This classic Swedish dish is perfect as a side dish, sandwich topping, or even as a potato salad! Best enjoyed while dreaming about the fjords.

Ingredients

  • Half a cucumber
  • 10 green peppercorns
  • 5 black peppercorns
  • 2 tablespoons apple cider vinegar
  • 3 1/2 tablespoons chopped dill
  • Pinch of Himalayan pink crystal salt

Instructions

  1. Rinse and slice the cucumber in very thin slices
  2. Grind the peppercorns
  3. Mix pepper, salt, vinegar and dill
  4. Fold in the cucumber
  5. Let sit in fridge for an hour or more, to let the cucumber soften and moisten up the mix
