Sweet + sour, wholesome + decadent come together in these gorgeous raw + gluten-free raspberry tarts! You’ll love popping these out as dinner party desserts—they only take 20 minutes to make, can be prepped beforehand, and are chock-full of antioxidants, plant-based protein, dietary fiber, healthy fats, vitamin E, vitamin C, manganese, copper, and iron!
Ingredients
Crust
- 1 tablespoon coconut oil
- 8 pitted dates
- 1/2 teaspoon sea salt
- 1/2 cup walnuts
- 1 tablespoon Philosophie Berry Bee Honey
- 1 tablespoon Philosophie Berry Bliss Superfood + Protein Blend
Filling
- 1/2 cup raw raw cashews, soaked
- 1 tablespoon Philosophie Berry Bee Honey
- 1/4 teaspoon vanilla
- 1/2 teaspoon lemon juice
- 1/4 cup raspberries (+ extras for topping)
Instructions
- Pulse the crust ingredients in a food processor until they form a fine crust.
- Spoon the crust into ramekins, pressing down to form an even layer, and then chill the ramekins in the freezer for 10 minutes.
- Blend the filling ingredients until creamy, remove the ramekins from the freezer, and top off the crust.
- Sprinkle on raspberries, dig in, + ENJOY!
