Raw Lemon Chiffon Pudding

Gena says “This pudding will be a great dessert option for any starch-based meal, but you can also enjoy it with some fruit if you like! It would also taste wonderful with freshly squeezed lime juice for a “key lime” variation.”


  • 1 avocado, cut into chunks
  • Juice of 1 large lemon
  • Sweetener to taste (I suggest a few drops or 1 packet of stevia, 6 soaked dates, or 1/4 cup agave syrup)
  • 3 tbsp water (start with 2 and adjust based on how thick you prefer the pudding)


Blend all of the ingredients together in a food processor or a high speed blender. Put the pudding in the fridge for at least thirty minutes to thicken and set before digging in!
