Raw Green Sushi Roll with Peanut Sauce

If you happen to have some raw nori seaweed on hand this recipe makes for a quick meal on the fly! Simply wrap up your fresh veggies, sprouts, spinach, and avo in nori, blend together a quick peanut sauce (using jungle peanut butter for a truly raw version, or try subbing in almond butter), and voila! Dinner is served. This also makes a great nutrient and protein rich packed lunch option for school or work. Enjoy!

Ingredients

  • nori sheets
  • chopped avocados (or any other vegetables you would like to use)
  • spinach (chopped)
  • sprouted quinoa
  • Alfalfa sprouts
  • Peanut sauce (blend together peanut butter or jungle peanut butter, tahini, some garlic, a little agave and water until a thick, creamy sauce)

Instructions

1. Place vegetables, sprouts and sauce on nori sheets and roll them together.

2. Slice into five or more pieces and serve with more peanut butter sauce, tahini and sesame seeds.
