Raw Granola Bars

Did you know that most granola bars on the shelf, yep even the ones marketing themselves as healthy and full of nutrition, are highly processed and packed with sugar? Not an ideal snack to feed yourself OR your kids. Home made granola bars on the other hand are full of flavor, nutrition and energy. And the best part is, they are pretty easy to make. Throw in what ever you want. Use your favorite nuts, seeds, dried fruit, coconut, buckinis, berries…. No rules here! What ever you like. Dried apple, for example, would taste amazing. Enjoy!

Ingredients

  • 1 cup Almonds
  • 1 cup dates
  • 2 tbsp water
  • 1/2 cup raisins
  • 1/4 cup dried apricot, diced
  • 1/2 cup shredded coconut
  • 1/2 cup pepitas
  • 1/2 cup buckwheat groats
  • 2 tbsp sesame seeds
  • 1/3 cup flax seed meal
  • 2 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1 tbsp vanilla powder
  • 1 tbsp cinnamon

Instructions

  1. Blend almonds, dates and water in a food processor till well combined. You wan’t to leave a bit of texture in the mixture.
  2. Add all the remaining ingredients and mix them in with a spoon.
  3. Spread the mixture in the cake tin or a container lined with cling wrap and firmly press it in. Pop the granola in the freezer to set for 20 minutes or so. Then cut into bars.

Notes

These granola bars are perfect without dehydrating them. If, however, you want them to be a bit more crunchy, you can dehydrate them. Store the bars in the fridge.
