What’s another way to enjoy bananas? Turn them into banana muffins! If in a hurry, little banana bread bliss balls are a great option, or you can make a 1 big loaf of banana bread. This recipe is simple and couldn’t be easier to make! No baking and not much mess either 🙂 Enjoy!

Ingredients

  • 1 1/2 cups dates
  • 2/3 cup almond butter
  • 2 medium bananas
  • 1 1/2 cup walnuts
  • 1/2 cup coconut flour
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • pinch salt

Instructions

  1. Place all the ingredients into a food processor and run until smooth and sticky dough is formed. If the dough seems too moist, add a more coconut flour and walnuts. Add a bit of a time, you don’t want the dough to be too dry.
  2. Press the dough in a cake tin or use silicone molds. (I used mini sized silicone cup cake molds for these.) This banana bread is ready to be enjoyed straight away, or store in the fridge for later xx
