Raw Apricot Chia Energy Bars

These petite and portable raw vegan energy bars are the perfect fuel for on-the-go munching. Store-bought bars can take a toll on your grocery budget and may contain unpronounceable preservatives. So why not make your own homemade bars? Next time you need an afternoon pick-me-up or a post-workout nibble, try these no-bake sweet and chewy energy bar recipe.

  1. Line a 8×8 or 9×9 square pan paper.
  2. Place dates, apricots and cinnamon in a blender, and pulse several times until dates ands apricots turn into chunks.
  3. Add pumpkin, chia seeds and coconut oil to the mixture in the blender, and pulse until there are small chunks of pumpkin seeds
  4. Press the mixture into the prepared pan. Roll the top with a glass to flatten completely.
  5. Refrigerate for 45 minutes.
  6. Slice into bars or squares.
