These raw pink pitaya bounty bars are loaded with super food pink pitaya freeze dried powder. Pink pitaya powder gives you a gorgeous color and health benefits! This recipe is also gluten free and vegan. Nothing better than a tasty treat that doesn’t take forever to make and have a mile long list of ingredients, don’t you agree?!
Ingredients
Filling
- 1 1/2 cup shredded coconut
- 1/3 cup coconut oil, melted
- 1/4 cup maple syrup
- 2 tbsp pink pitaya powder (more or less, depending how intense color you like)
Chocolate Coating (1 1/2 cups)
- 1/3 cup coconut oil, melted
- 1/3 cup maple syrup
- 1/3 cup cacao powder
Instructions
- Place all the filling ingredients into a mixing bowl and stir until well combined.
- Press the mixture into a lined container or a cake tin. Pop in the freezer to set.
- In the meantime, place all the chocolate coating ingredients into a clean mixing bowl and stir until well combined.
- Remove the filling ingredient from the freezer and cut into bite sized pieces.
- Dip each piece in chocolate coating. Enjoy!
