Parsnip and Cashew Sushi

Ribbons of thinly sliced cucumber wrap around a delicious filling of parsnip and cashew rice speckled with raw nori flakes. Such a cute, simple and healthy appetizer or snack from Erin Bosdet of Simply Dish! Top with a chunk of fresh avocado for the perfect bite sized savory treat.

Yield: around 8 squares

Ingredients

For each ‘tart’:

  • 1 red tomato
  • 1 orange tomato
  • 1 yellow tomato

Instructions

Remove the skin from your cucumber.

2. Using a vegetable peeler, slice your cucumber into ‘ribbons’ lengthwise.

3. Set aside.

4.Place the parsnip, cashews and nori into your food processor and process until well combined, kind of resembling rice.  🙂

5. Spread about a tablespoon of the parsnip mixture down the middle, leaving a bit of room at each end.

6. Roll up like a sushi roll, top with a piece of avocado and enjoy!
