Oat Free Hazelnut Cacao Truffles

Protein-packed chocolate truffles, no gluten, processed sugar and unapologetically indulgent. Alexandra of In My Bowl uses bulk ingredients to whip up these travel-friendly, nutrient dense Hazelnut Cacao Truffles for an easy breakfast, snack, or dessert. Superfood infused for all the added nutrition rolled in toppings of your choice!

Yield: 18 Truffles

Ingredients

  • 1 cup raw hazelnuts
  • 1 cup cashews
  • ¾ cup cacao powder
  • ½ cup coconut flour
  • 3 tablespoons raw hemp seeds
  • ¾ cup filtered water
  • 15 medjool dates, pitted
  • 2 tablespoons cacao nibs

Instructions

  1. In a food processor, process hazelnuts, cashews, cacao powder, coconut, and hemp till a flour-like consistency.
  2. Add water and dates, then continue blending till ingredients form a dough.
  3. Pulse in cacao nibs, then remove dough from food processor.
  4. Divide dough into 18 even pieces, using your hands, roll each piece into a ball.

Notes

Refrigerate in airtight container up to one week, or in freeze up to one month.
