Icicle Chocolate Squares

Icy cold, melt-in-your-mouth squares of chocolatey fudge-like goodness by Erin Bosdet of Simply Dish that require only 4 simple ingredients to make. Whats not to love about that?! Store a batch of these delectable morsels in your freezer and satisfy any chocolate craving in a completely healthy way. Use maple syrup to sweeten, or for an all-raw and lower glycemic version use coconut nectar. Enjoy!

Yield: 1 dozen

Ingredients

  • 1/2 cup cacao powder
  • 1/2 cup coconut oil
  • 1/2 cup raw pecans
  • two tablespoons of maple syrup (or coconut nectar for a fully raw version)

Instructions

1) Place ingredients in your food processor and process until smooth… almost like a pudding.

2) Line a small, individual sized loaf pan with parchment and fill it with the decadent mixture… save a little bit for you to ‘test’ with a spoon.

3) Place it into the freezer just until it hardens…maybe thirty minutes. Slice in smallish pieces and store them in the freezer.
