Satisfy your hunger instantly with these delicious Goji Ginger Bites. This antioxidant rich recipe by Kerry Ogden is full of protein and healthy fats and take less than 5 minutes to make in your food processor. Perfect for a quick and nutritious snack or after dinner treat. Store them in your fridge – they are the perfect sweet treat to satisfy a gingersnap cookie craving!
Yield: about 12, 1- 1 1/2
Ingredients
- 8 Medjools
- 1 cup pecans
- ¼ cup coconut flakes, unsweetened
- ¼ cup goji berries
- 1 T ginger, minced
- ½ vanilla bean
- 1/8 tsp salt
Instructions
1) Cut the vanilla bean in half and slide your knife down the front, being careful not to puncture through both sides. Take a teaspoon and scrape out the seeds.
2) In a food processor combine all ingredients. If mixture is too dry, drizzle a bit of water or drop of honey.
3) Using a small cookie scooper to portion and form into 1-inch balls.
4) Store in fridge.
