Date Almond Cookies

The flavors of the almonds, carob, cinnamon, & dates create a sort of creamy, crunchy texture, they almost remind me of fig newtons.

Yield: approx. two dozen

Ingredients

  • Carob Date Filling:
  • 3/4 c almonds
  • 1 T tahini
  • 1.5 c california dates, soaked
  • 1/4 c carob powder
  • 1 T vanilla
  • Cinnamon Almond Crust:
  • 1 c almonds
  • 2 T + 1 t agave nectar
  • pinch salt
  • 1 t cinnamon

Instruction

  1. Carob Date Filling:
  2. 1. Process almonds.
  3. 2. Add everything else & process until the mixture is incorporated (it will be sticky).
  4. Cinnamon Almond Crust:
  5. 1. Process almonds.
  6. 2. Add everything else.
  7. 3. Process until the crust starts to come together.
  8. To assemble:
  9. Start with a rectangle of plastic wrap, form crust into a rectangle.
  10. Place the filling on top of the crust.
  11. Roll into log.
  12. Refrigerate for at least an hour.
  13. Cut off in desired thickness.
  14. enjoy.
