This easy and wholesome recipe is a great afternoon snack for the kids or at your next party. While the ingredient list is minimal (just 4 ingredients!) these gooey truffles pack a solid dose of protein and vitamin E from raw almonds, as well as antioxidants, vitamins, minerals, and immune system-activating polysaccharide sugars found within raw goji berries. Enjoy!
Yield: 12 truffles
- 2 cups raw almonds
- ¼ cup goji berries soaked in 1 cup of water for 1 hour
- ¼ cup hemp seeds
- ¼ cup honey
- ½ cup water
- Blend in a food process all your ingredients for 2-5 min scraping the sides down until you reach dough like consistency.
- Roll into bite size truffles. Refrigerate any leftovers in an airtight glass container and consume within 4 days.
