Carrot Cake Cookies

A little bite sized carrot cake! The great thing about raw desserts is you don’t have to feel even a smidgen of gilt while eating. These are totally healthy and easy to whip up. Try making sandwich cookies by spreading a sweet cashew cream cheese frosting in between two layers of cookie. Don’t forget to dunk your cookies in some fresh almond milk and smile because life is just amazing!

Yield: 8 minis or 4 sandwiches

Ingredients

  • 1/2 C Carrot Pulp
  • 1/4 C Raw Oat Flour
  • 2 Tablespoons Coconut Oil
  • 1 Tablespoon Raw Honey
  • 3 Dates, made into paste
  • Dash of Cinnamon, Nutmeg, + Cloves

Instruction

1) Process everything together until fully combined.

2) Dehydrate 145 degrees – 45 mins, then 116 degrees – 8 hours

Store in the fridge
