Anti-Inflammatory Berry, Watermelon, and Ginger Smoothie

This smoothie is sort of a hybrid between creamy and thick and frosty and fruity. It’s got the look and taste of a frosty, summery concoction, but the addition of chia seeds and avocado give it hints of creaminess and a thick texture. It’s a perfect light breakfast or a refreshing afternoon snack option. And it’s a perfect vehicle for two of the most highly anticipated summer fruits: ripe berries and juicy watermelon. Whether inflammation concerns you or not, hopefully you’ll find a way to incorporate this cooling treat into your day soon.

Ingredients

  • 1 heaping cup watermelon chunks (be generous!)
  • 1 1/2 cups frozen mixed berries
  • 1 inch piece ginger, peeled and chopped (if you’re using a conventional blender, you may wish to grate the ginger before adding it, so that it blends more easily)
  • 3/4 cup coconut water
  • 2 teaspoons chia seeds
  • 1/4 Hass avocado

Instructions

Blend all ingredients and serve.
