This 2 minute green peanut soup is raw, vegan, and great both hot or cold. Throw some peanuts in a blender, add water and whichever green veggies you love, blend, and presto! Done. If this isn’t fast food then we don’t know what is.
Ingredients
- 100 ml / 0.4 cups raw peanuts
- 500 ml / 2 cups water
- 1 cup broccoli, fresh or frozen
- 1 cup spinach, fresh or frozen
- a handful of leek, sliced
- 1 garlic clove, chopped
- 1 tsp ginger, grated
- a handful of basil
- juice 1/8 lemon
- black and white pepper
- salt
Instructions
- Start by blending the peanuts to a fine powder (a few chunks left doesn’t matter though)
- Add water and blend again
- Add the rest of the ingredients and blend until smooth
- Garnish with whatever toppings you like, such as fresh herbs nuts or seeds like hemp or pumpkin, or raw sauerkraut.
