2 Minute Cold Green Peanut Soup

This 2 minute green peanut soup is raw, vegan, and great both hot or cold. Throw some peanuts in a blender, add water and whichever green veggies you love, blend, and presto! Done. If this isn’t fast food then we don’t know what is.

Ingredients

  • 100 ml / 0.4 cups raw peanuts
  • 500 ml / 2 cups water
  • 1 cup broccoli, fresh or frozen
  • 1 cup spinach, fresh or frozen
  • a handful of leek, sliced
  • 1 garlic clove, chopped
  • 1 tsp ginger, grated
  • a handful of basil
  • juice 1/8 lemon
  • black and white pepper
  • salt

Instructions

  1. Start by blending the peanuts to a fine powder (a few chunks left doesn’t matter though)
  2. Add water and blend again
  3. Add the rest of the ingredients and blend until smooth
  4. Garnish with whatever toppings you like, such as fresh herbs nuts or seeds like hemp or pumpkin, or raw sauerkraut.
