These Summer Swirl Superfood Pops make for the best summertime treat. Not to mention the pretty shade of pink with a sprinkling of yummy coconut. On a hot day, they’ll totally hit the spot with their refreshingly sweet taste. Coconut is a superfood on it’s own, but combine that with maca powder, chia seeds and antioxidant-rich blueberries and strawberries, and you have energizing superfood popsicles!

Ingredients
Pink Layer
- 1 cup light coconut milk (or any plant milk)
- 1 cup strawberries (fresh or frozen)
- 1/2 tablespoon maple syrup
- 1/2 teaspoon maca powder
Purple Layer
- 1/2 cup light coconut milk (or any plant milk)
- 3/4 cup blueberries (frozen produces better purple color)
- 3 tablespoons chia seeds
- 1/2 tablespoon maple syrup
- shredded coconut, optional
Instruction
- In a blender, blend all ingredients for the pink layer until smooth. Pour the mixture into 8 popsicle molds. Set aside.
- Rinse the blender.
- Now blend all ingredients for the purple layer until smooth.
- Pour this mixture over the pink layer. Using a popsicle stick, swirl the purple layer a bit so it creates a swirly effect with the pink layer. Sprinkle a layer of shredded coconut over each popsicle.
- Insert the popsicle sticks.
- Freeze for 4-5 hours or until frozen. Enjoy!
