Summer Swirl Superfood Pops

These Summer Swirl Superfood Pops make for the best summertime treat. Not to mention the pretty shade of pink with a sprinkling of yummy coconut.  On a hot day, they’ll totally hit the spot with their refreshingly sweet taste. Coconut is a superfood on it’s own, but combine that with maca powder, chia seeds and antioxidant-rich blueberries and strawberries, and you have energizing superfood popsicles!

Ingredients

Pink Layer
  • 1 cup light coconut milk (or any plant milk)
  • 1 cup strawberries (fresh or frozen)
  • 1/2 tablespoon maple syrup
  • 1/2 teaspoon maca powder
Purple Layer
  • 1/2 cup light coconut milk (or any plant milk)
  • 3/4 cup blueberries (frozen produces better purple color)
  • 3 tablespoons chia seeds
  • 1/2 tablespoon maple syrup
  • shredded coconut, optional

Instruction

  1. In a blender, blend all ingredients for the pink layer until smooth. Pour the mixture into 8 popsicle molds. Set aside.
  2. Rinse the blender.
  3. Now blend all ingredients for the purple layer until smooth.
  4. Pour this mixture over the pink layer. Using a popsicle stick, swirl the purple layer a bit so it creates a swirly effect with the pink layer. Sprinkle a layer of shredded coconut over each popsicle.
  5. Insert the popsicle sticks.
  6. Freeze for 4-5 hours or until frozen. Enjoy!
