Simon Beswetherick

Simon first switched to a high-raw diet in 2012 and soon noticed a number of benefits, including improved digestion, higher energy levels, better sleep and clearer skin. He relishes the challenge of creating tasty and imaginative raw vegan dishes and ‘rawifying’ cooked favourites. He regularly connects with the vibrant online healthy-eating community to both tap into and contribute to the constant flow of inspiration and ideas. As his passion for uncooking grew, he went on to obtain certification as a raw food chef. In 2014, he had the opportunity to help design the menu for Italy’s first raw vegan restaurant, Mantra, in Milan.

Upon returning to his base of London, he set up a bi-monthly Raw Dining Club, which he currently runs with a raw foodist partner. Raw Dining Club pops up in different locations, serving gourmet raw vegan creations to London’s blossoming raw food community.
