Raw Salted Caramel Chocolate Slices

This recipe features 4 incredible flavors: chocolate, vanilla, salted caramel and raspberries. The crust is gooey and dense, while the vanilla- and the caramel layer are sweet, yet a little lighter. The raspberries gives this dessert a nice kick. You can also throw in some cacao buckinis, just to give it all a little crunch. So tasty!

 

Ingredients

Crust
Vanilla layer:
  • 1 cup raw cashews (soaked for a few hours)
  • 2 tbsp lemon juice
  • 3 tbsp rice malt syrup
  • 1 tsp vanilla bean powder
  • a few tablespoons of water
Salted caramel layer
  • 1 cup raw cashews (soaked for a few hours)
  • 1/2 cup raw coconut sugar
  • 1 tsp vanilla powder
  • 1/4 tsp salt
  • 4 dates (soaked for a few hours)
Chocolate topping
  • Either melt a raw, vegan chocolate bar, or melt 3 tbsp coconut oil or cacao butter, and mix with 3 tbsp liquid sweetener and 3 tbsp raw cacao powder.

Instructions

  1. Place all ingredients for the crust in a food processor and process until you get a sticky dough. Press the dough out in a medium sized lined tin. Drizzle over raspberries and the cacao buckinis and set aside.
  2. To make the vanilla layer, simply blend all the ingredients well together in a high speed blender. Add as much water you need to make it blend, but the less the better, as you want a thick batter. Spread the batter over the crust and place the tin in the freezer for at least an hour.
  3. To make the salted caramel layer, simply repeat the process above. Spread on top of the vanilla layer and let the cake set in the freezer for a least a few hours.
  4. Slice the cake into bars or squares before serving. Decorate with melted chocolate and whatever else you may have on hand.
