If you’ve tried coconut yogurt from the supermarket only to be left disappointed at best, or disgusted at worst, try this homemade version before you swear to never partake again. You’ll see why some people swear by it. Your kids will even like it, and shhh, they don’t even have to know it’s made from coconut and super healthy. This recipe is full of natural electrolytes and probiotics {good bacteria for a healthy gut}!

  • 4 young thai coconuts
  • 1 cup of young thai coconut water
  • 1/2 TSP Kefir starter OR 2 capsules of high quality probiotics (RFR note, you can also use Sunbiotics Vanilla Probiotics)
  • 1/2 lemon, juiced
  • 1 vanilla bean, scraped
  • 1 Tbls maple syrup or honey

  1. In a Vitamix, add all ingredients and blend until smooth and creamy, like your favorite yogurt.
  2. Let sit at room temperature for about 15 hours. This will activate kefir starter and/or probiotics capsules. Refrigerate. Yogurt will last 3 days. Top with your favorite granola or fruit.

Note: persimmons are wonderful with this yogurt. So are berries and kumquats when in season. Also, try almond extract, cacao, or even some extra lemon. For a heartier breakfast add granola or you can top it with sweeter fruits like, peaches, bananas, and so on. Enjoy!
Juli NovotnyAbout Juli Novotny

I was a professional baker at the age of 16 at a popular pastry shop near my house. By age 24, a few years after graduated from UCLA, I started a health food company, Kookie Karma, in Santa Monica, CA. Now 31, living in San Diego, I'm a proud mom with two little boys of my own: Pierce and Roman - just 12 months apart! What started as a "baby blog"" for those curious friends and family has transformed into this PUREmamas informational site overnight. I now share fun healthy food, pregnancy and everyday life ideas with new moms, pregnant women and modern conscious parents alike! This is not a raw vegan site; I am not a baby expert or health professional; but I do show parents/adults how to incorporate raw and superfood principles into their everyday routines and diets. Whether your an athlete, a new mom, are sick, overweight, tired, or just needing a motivational kick-in-the-butt, that's what this blog is here for. Now, before you get off your bottom to clean out the cupboards and start fresh, sit down for a bit longer and give this blog a good read. You will find everything from pantry basics to smoothies to everyday recipes and supplement must-haves. While you're at it, revamp your home, too. I have collected some savvy ideas to get your house looking as GREAT as your new wholesome self! Enjoy. Feel free to post on our discussion boards any thoughts and ideas and, of course, questions. If Juli doesn't have the answer, or you don't like her answer, she will reach out to her network of hip, smart and healthy pregnant friends and parents (or ever her midwife.)
