Maple “bacon” Ice Cream

A you a fan of a sweet and savory flavor combo? If the answer is yes, and if you like to walk a bit on the wild side, you will love Lisa Viger’s raw and vegan version of maple bacon ice cream made with frozen bananas, real maple syrup, and yes, zucchini….

Give it a try!


Zucchini Bacon:

1 zucchini, sliced 1/4" thick

2 tablespoons olive oil

2 tablespoons maple syrup

1 tablespoon balsamic vinegar

1 small clove garlic

1/2 teaspoon liquid smoke

1/2 teaspoon black pepper

1/2 teaspoon salt

Banana Ice Cream:

4 frozen bananas

1 tsp vanilla extract

splash fresh almond milk


Zucchini Bacon:

1) Slice the zucchini into strips about 1/4" thick. 2) In a small bowl, whisk together the remaining ingredients. 3) Toss with the zucchini until well coated, then dehydrate for several hours or overnight, until just a little bit crunchy but pliable.

4) Tear the zucchini bacon into pieces and serve over vanilla banana ice cream with maple syrup.

5) To make the ice cream, slice and freeze four bananas. When ready to use, grind them in a food processor with one teaspoon vanilla and a splash of almond milk.
