Chocolate Peanut Butter Pillow Cookies

Yes, it’s Monday, but that’s nothing a little chocolate and peanut butter can’t fix! Chocolate peanut butter cookies that are actually raw, healthy, and unprocessed? It’s the stuff dreams are made of….

[recipe inspired by Amy Lyons’ recipe in Fragrant Vanilla Cake]



  • 1 cup rolled oats
  • 1 1/2 cups shredded coconut
  • 1/2 cup ground flax seeds
  • 3/4 cup raisins
  • 1/8 teaspoon sea salt
  • 1/4 cup peanut butter (RFR tip: use jungle peanut or make your own from un-toasted valencia peanuts for a truly raw version)
  • 1/2 cup melted coconut oil
  • 3/4 cup cacao powder
  • 1/4 cup maple syrup
  • 1/8 teaspoon sea salt


To make the cookie
  1. Grind everything except the raisins into flour in a blender or food processor.
  2. Add the raisins and process until it becomes a dough that holds its shape when pressed between two fingers.
  3. Roll out evenly, as thick or thin as you prefer, and cut into cookies. Leave the cookies to harden in the freezer.
To make the chocolate
  1. Whisk the ingredients together until smooth.
  1. Scoop some peanut butter onto each cookie, stick 'em back in the freezer until solid. Then dip them all in the chocolate!
  2. Throw back in a freezer for a few minutes, then store in the fridge or freezer and enjoy whenever you desire. xx
