Belgian Endive Salad with Orange and Walnuts

Did you know that bitter vegetables help you to feel satisfied quicker and reduce sugar cravings? They’ll also help your liver to flush out toxins, which in turn will lead to better sleep and higher energy levels. This Belgian Endive Salad with Orange and Walnuts is one of the best ways to serve belgian endive raw. It’s a simple, no-fuss dish you can throw together in just 15 minutes. If you like endive, orange and walnuts, you’re in for a treat!

 

 

 

Ingredients

Walnut Dressing
  • 3 tablespoons lemon juice
  • 1 tablespoon walnut oil (or olive oil)
  • 1 tablespoon maple syrup
  • Black pepper & Himalayan crystal salt or sea salt, to taste
Belgian Endive Salad
  • 2 stalks Belgian endive
  • 2 large handfuls leafy greens
  • 1 ½ cup sprouted or cooked quinoa (or amaranth, buckwheat)
  • 2 small oranges, sliced into rounds (or mandarin orange, grapefruit, blood orange…)
  • Chives, finely chopped (or other herbs)
  • 1 large handful walnuts, roughly chopped

Instructions

Walnut Dressing
  1. Combine lemon juice, walnut oil, maple syrup in a glass jar. Add black pepper and sea salt to taste. Close the lid and shake well.
  2. Taste and adjust the flavorings if needed.
Belgian Endive Salad
  1. Cut the Belgian endive stalks lengthwise into thin wedges. Serve them with the leafy greens, quinoa and orange slices.
  2. Top with chopped chives and walnuts.
  3. Pour the walnut dressing on top or serve it on the side.

Notes

JULIE’S TIPS & TRICKS: This Belgian endive salad will stay fresh for 2 days or longer in an airtight container in the refrigerator, especially if you store the dressing in a separate container. Chilled, the walnut dressing will stay fresh for at least 1 week. This walnut dressing tastes really great with a spoonful of mustard too! Now I would love to hear from you!
