Rawtella Mint Ice Cream Squares

Refresh yourself with this easy and delectable raw vegan ice cream chocolate treat. Vanilla and mint make the base of this ice cream and then we enrobe it in dark Rawtella Mint.


Ice Cream Base

  • 1 1/2 cup young coconut meat and 1/2 cup young coconut water
  • 1/2 cup soaked cashews
  • 1 tbs. coconut butter
  • 3-4 tbs. coconut sugar
  • 2 tsp. vanilla powder
  • 4-6 drop essential oil of peppermint
  • 3 tbs. soaked and dried buckwheat (optional)


  • 1/2 a jar Rawtella Mint (melted)


Ice Cream Base
Blend everything (except buckwheat) till smooth and pour into square candy molds. Top with a few pinches of buckwheat and freeze till hard.

Melt half a jar of Rawtella Mint in a deep bowl. Drop each ice cream square into the Rawtella Mint, coating all the sides. Use a fork and spoon to help. Take out with a fork, set on a plate that has a sheet parchment paper on top and freeze till hard.
