A flavorful and atypical version of traditional cous cous done raw, vegan style. Not a stitch of gluten to be found in this tasty recipe by Fee O. of Raw Fit and Happy! Instead of bulgar wheat she’s utilized raw cauliflower pulsed into small pieces. You’ll also find a few hidden surprises like fresh orange juice and turmeric spice. Enjoy!
Yield: 2-3
Ingredients
- 1/2 head of cauliflower, chopped
Dressing
- 1 cup of halved cherry tomatoes
- 1/4 cup sun-dried tomatoes
- 1/3 cup orange juice
- 1/2 t paprika powder
- dash of turmeric
And to mix in:
- 1 orange, diced
- 1 cup of halved cherry tomatoes
- 1 large spring onion, chopped
- 1/3 cup of parsley, chopped
Fresh fruit layer
- 1 medium orange
Instructions
1) For the base, pulse cauliflower into small pieces. Set aside.
2) For the dressing, blend cherry tomatoes, sun-dried tomatoes and orange juice with spices until creamy. Massage into cauliflower.
3) In a bowl, combine this base with orange pieces, halved cherry tomatoes, chopped spring onion and parsley.
