Fill your hungry belly with a delicious raw nori wrap by Eva Hajkova of Raw Eva.com. Instead of relying on rice she uses a creamy cashew spread to help bind the ingredients together. Fill up your nori rolls with the fresh, seasonal vegetables of your choice such as cucumber, red bell pepper, micro greens and sunflower sprouts. Enjoy!
Ingredients
- 1 cup soaked cashews
- ¼ cup water
- 3 tbsp tamari
- 3 tbsp nutritional yeast
- ½ red capsicum
- 2 tbsp olive oil
- tsp turmeric
- ½ tsp paprika
- Lemon juice of one lemon (optional)
- Pinch salt and pepper
Nori wraps
- Cashew spread (see recipe above)
- 4 Nori sheets
- 1 capsicum
- 1 cucumber
- Sunflower sprouts
Instructions
Cashew Spread
1) Put all ingredients in a blender and blend until smooth.
Nori Rolls
1) Lay each Nori sheet on your cutting board.
2) Spread your cashew dip over, make cucumber and capsicum stripes and lay on your spread. Put the sprouts on the top and roll the sheet carefully.
3) Cut wide pieces with sharp knife. The size should be just right to go to your mouth.
