Raw Caramel Sauce

This Raw Caramel Sauce by Nikki Stokes of Eating Vibrantly tastes absolutely amazing paired with fresh apple slices or berries. The perfect healthy sweet treat that only takes a few minutes of blending to make. Gluten, dairy-free, raw AND paleo friendly! You really can’t go wrong with this simple and classic recipe that even the children in your household will love.


  • ¼ cup (35g) cashews
  • ¼ cup (38g) macadamias
  • ½ tsp vanilla bean powder
  • 2 tsp mesquite powder
  • pinch salt
  • scant ½ cup (115g) water
  • ⅔ cup (110g) ice
  • 1 cup (240g) medjool dates, pitted


1. Put everything except the dates in your blender and blend until you have a smooth nut “milk”.

2. Add the dates and process until smooth and creamy. Use your tamper to help it to blend fully.

3. Serve.
