Puncha creama is the Caribbean’s version of eggnog. This ice cream is rich and creamy without any dairy. It’s also simple but oh so good. What better way to summer-ize a classic cold weather treat!
- ½ cup shredded coconut
- 1 cup raw cashews
- ½ cup maple syrup or your favorite sweetener
- Pinch Celtic salt
- ½ tablespoon cinnamon
- 3 cups water
- Blend all the ingredients until completely smooth.
- Strain and freeze in an ice-cream maker and serve
