Peanut Butter Oat Bars

This recipe takes 10 minutes to make and disappears even quicker. An energy giving combo of balanced protein, fiber, and healthy fats courtesy of a plethora of oats, various different nuts and seeds, cacao nibs, coconut oil, a splash of maple, and of course…peanut butter. These are addictive.

Ingredients

  • 1 1/2 cups rolled oats
  • 3/4 cup pumpkin seeds
  • 2 tablespoons hemp seeds
  • 2 tablespoons chia seeds
  • 1/4 cup raw cacao nibs
  • 1/2 teaspoon vanilla powder
  • 1/4 cup peanut butter (RFR tip: you could also used sunflower butter or raw almond butter of you prefer)
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • Pinch Himalayan salt

Instructions

  1. Stir together all the dry ingredients then stir in the wet and mix until everything is evenly coated and the mixture is thoroughly moist and sticks together (i.e. isn’t crumbly).
  2. Press into a lined bread loaf pan and freeze until solid, around 10 minutes. Optional: top with chocolate drizzle!
