This recipe takes 10 minutes to make and disappears even quicker. An energy giving combo of balanced protein, fiber, and healthy fats courtesy of a plethora of oats, various different nuts and seeds, cacao nibs, coconut oil, a splash of maple, and of course…peanut butter. These are addictive.
Ingredients
- 1 1/2 cups rolled oats
- 3/4 cup pumpkin seeds
- 2 tablespoons hemp seeds
- 2 tablespoons chia seeds
- 1/4 cup raw cacao nibs
- 1/2 teaspoon vanilla powder
- 1/4 cup peanut butter (RFR tip: you could also used sunflower butter or raw almond butter of you prefer)
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- Pinch Himalayan salt
Instructions
- Stir together all the dry ingredients then stir in the wet and mix until everything is evenly coated and the mixture is thoroughly moist and sticks together (i.e. isn’t crumbly).
- Press into a lined bread loaf pan and freeze until solid, around 10 minutes. Optional: top with chocolate drizzle!
