There’s one moment in particular that is truly a monumental for any raw food lover – that moment when you turn frozen bananas into ice cream and wonder what you’ve even been doing with your life up until this point?! How can something so simple be soooo GOOD. This recipe combines good old fashioned nanna ice cream with the tropical flavors of passion fruit, lemon and coconut water – however you can really use any fruit that is in season. Enjoy!
Ingredients
- 4 frozen bananas, sliced
- 1/3 cup coconut water
- 1 passion fruit
- 1 tbsp lemon juice
- a pinch of stevia, a tablespoon agave or any other sweetener of choice (optional)
- toppings: 1 sliced banana, 1 passion fruit
Instructions
- Place the frozen bananas in a food processor along with the coconut water. Blend until smooth. Add in the passion fruit (only the seeds of course), lemon juice and sweetener. Blend for a few more seconds.
- Scoop into one or two bowls, top with banana coins and passion fruit and enjoy!
