Mango Salad with Honey-Lime Dressing

There are so many different textures and colors in this salad! Creamy avocado, sweet mango, crunchy bell peppers all on a bed of tender mixed greens. Let’s not forget the flavour-packed pepitas (pumpkin seeds)! The dressing is a sweet and citrusy honey-lime flavor with just enough crushed red pepper flakes for a hint of spice.


Honey-Lime Dressing
  • 3/4 cup olive oil
  • 4 1/2 tablespoons fresh lime juice
  • 1 1/2 tablespoons honey
  • 1 1/2 teaspoons dijon mustard
  • 1/2 teaspoon crushed red pepper flakes (more if you want!)
  • 1 large clove garlic, minced
  • sea salt and pepper, to taste
  • 312g (11oz) mixed greens
  • 1 mango, diced
  • 1 avocado, peeled and diced
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1/4 cup minced fresh parsley
  • 1/3 cup raw or sprouted pepitas
  • honey-lime dressing, to taste


  1. In a large bowl, toss all salad ingredients together dressing is evenly distributed. Enjoy!
