These are the perfect snack to have around when you’re craving something sweet but want to keep it healthy. The best part? They take about 5 minutes to put together. Have one, have three, have six – no one’s looking.
- 1 cup raw cashews
- 1 cup dried mango
- 1 cup dates, pitted
- 1/3 cup shredded coconut + extra for rolling
- zest of 1 lime
- pinch salt
- Soak dried mango in warm water for few minutes. Drain and dry from extra water with paper towel.
- Place all the ingredients into a food processor and blend until sticky mixture is formed.
- Roll into balls and roll the balls in desiccated coconut. Enjoy!
