Lucuma Chia Seed Pudding with Blueberry Compote

Caramel and maple – flavored chia seed pudding topped with blueberry goodness! You cannot go wrong with this combination of superfood ingredients. Treat yourself!


Chia Seed Pudding
  • 1/4 cup chia seeds (black or white)
  • 1 cup almond milk
  • 3 tablespoons lucuma powder
  • 5 dates, soaked and pitted
  • 1/2 teaspoon vanilla powder
  • 1/2 teaspoon cinnamon
  • Dash of Himalayan salt
Blueberry Compote
  • 1 cup fresh blueberries
  • 3 dates, soaked and pitted
  • 1 tablespoon lemon juice
  • 1 tablespoon coconut oil, melted


Chia Seed Pudding
  1. Place chia seeds in a medium size bowl and set aside.
  2. Blend dates, lucuma powder, almond milk, vanilla, cinnamon and salt in a high speed blender until smooth.
  3. Pour mixture over chia seeds, whisk well until combined.
  4. Place uncovered in the fridge overnight or for a few hours.
Blueberry Compote
  1. Blend all ingredients except coconut oil in a high speed blender until smooth.
  2. Pour melted coconut oil in blender while on low speed to emulsify.


Substitute dates for any liquid sweetener, almond milk for any non-dairy milk and blueberries for any berry. Soak dates until soft. I soak mine in warm water for 30 minutes.
