Kale and Walnut Pesto

Nutritious and delicious. This raw vegan pesto is full of amazing good fats, healthy hemp seed oil and omega rich walnuts. Hemp seed oil is known for its skin healing properties. It also has a nutty, delicious, creamy flavour which works incredibly well as a replacement for traditional olive oil. Try it with your next batch of zucchini pasta!

Yield: 1 x 16 ounce mason jar of pesto

Ingredients

  • 4 organic Kale leaves – stem removed
  • 1/4 bunch Organic Cilantro
  • 3 cloves of garlic
  • 1.5 cups chopped Walnuts
  • 1/4 cup raw cashews
  • 3 tbs Nutritional yeast
  • 1/3 cup hemp seed oil
  • 100ml Lemon juice
  • 1/2 tsn salt
  • about the same amount of fresh ground pepper

Instructions

Blend in your food processor until smooth and everything has been broken down into a paste. Transfer to a sealable jar and use it on everything…its gold.
