There are a plethora of reasons why, if its not already, pesto should be making a regular appearance on your plate. This versatile “sauce” is so much more than that – it can be used as a topping to add a potent punch of flavor to your green salads (not just pasta noodles!), and can be doubled up as a dip for veggie crudité and/or flax crackers. Try using a spoonful in your raw soup and dressing recipes to liven them up a bit! This raw vegan recipe trades in the usual walnuts that you’ll see in many pesto recipes for nutrient-rich hemp seeds – which pack in the healthy omega fats as well as a solid dose of protein. Enjoy!
Ingredients
- ½ cup hemp seeds
- ½ cup pine nuts
- ½ cup basil
- 2-3 cloves of garlic
- Juice from ½ a lemon
- ¼ cup olive oil
- 1 tsp. sea salt
Instructions
- Combine all ingredients in food processor
- Blend until smooth & serve with fresh cut veggies or flax crackers
