You’re getting 2 recipes in one with this delicious soup/salad combo by Summer Sanders. If one of your health goals is to consume more greens on a daily basis you will find exactly what you’re looking for here. The soup is creamy and seasoned perfectly, with just enough lemon and shoyu to help flavor balance the “green” flavor of raw spinach. Avocado and tahini deliver healthy fats and a nice and creamy consistency. The kale salad will come together really quickly, and will give your body an additional boost of essential fatty acids from cold pressed olive oil and hemp seeds. Speaking of hemp, they also offer an amazing supply of amino acids, and when combined with kale, offer a seriously potent dose of easy to assimilate protein. We hope you enjoy!

Green Goddess Soup
  • 1/2 cucumber, peeled
  • 1 large handful of spinach
  • 1 medium bell pepper, cored
  • 1 small avocado
  • 1 tablespoon of raw tahini
  • 1 lemon, juiced
  • 2 tablespoons of Nama Shoyu
  • 1 date
Kale Salad
  • 5 kale leafs, finely chopped
  • 1/2 lemon, juiced
  • 1/4 avocado, mashed
  • 1 tablespoon of hemp seeds
  • 1/8-1/4 teaspoon of Celtic salt
  • 1 teaspoon of olive oil

Green Goddess Soup

1) In your Vitamix or blender add all ingredients, cover with 1 1/2 cups of water and blend. Adding more water for desired consistency. I like to let it chill for 10 minutes or so but you can eat it right aways.

Keeps for 3 days.

Kale Salad

1) Cut your kale and add to a bowl, cover with lemon, salt and oil. Massage into the kale.

2) Add avocado and hemp. Massage in as well.

The lemon will help break down the kale so that it’s not a tough. You can massage it for a few minute to really break it down.
