Difficulty/Easy
To make this pudding, you need the basics: chia seeds and milk. Once the chia seeds have soaked for at least twenty minutes, the result is a tapioca gel-like textured pudding. A rich, creamy, and nutrient-packed dessert or snack that can be ready in just twenty minutes. It can be topped with the seasonal fruit of your choice, but fresh figs are highly recommended, and add even more soluble fiber and minerals to the recipe. Bon appétit!
Ingredients
- 4 tbsp. chia seeds
- 1 ½ cups coconut milk
- 6 ripped organic figs
- 1 tbsp. coconut nectar
- pinch of vanilla bean powder
Instructions
- Blend well coconut milk, figs, coconut nectar and vanilla in a blender.
- Pour mixture over chia seeds and let it sit for 20-30 minutes. Give it a stir every 5 minutes. Can be refrigerated overnight.
- Topped off with figs, raspberries and strawberries.
