Watermelon and summer BBQ’s have always been a match made in heaven and for good reason. Watermelon is not only sweet and succulent, it is soothing to the body on a hot day. This refreshing raw soup combines sugary watermelon with tangy lime, peppery ginger, and cooling mint for a tantalizing savory and sweet flavor. Not to mention, it takes less than 10 minutes to make!
Yield: (4) 1-1/2 cup servings
Ingredients
- Flesh of one small seedless watermelon (about 5 cups)
- 4 pitted medjool dates
- 2 teaspoons fresh ginger, minced
- 1/4 cup fresh lime juice
- 10 large mint leaves
- 3/4 teaspoon sea salt
- 10 ice cubes
Instructions
- In a Vitamix or other high-speed blender, combine watermelon, dates, chia seeds, ginger, lime juice, mint leaves, sea salt and ice.
- Blend on high for 20 seconds. Divide between bowls and enjoy!
