Chilled Ginger Lime Watermelon Soup

Watermelon and summer BBQ’s have always been a match made in heaven and for good reason. Watermelon is not only sweet and succulent, it is soothing to the body on a hot day. This refreshing raw soup combines sugary watermelon with tangy lime, peppery ginger, and cooling mint for a tantalizing savory and sweet flavor. Not to mention, it takes less than 10 minutes to make!

Yield: (4) 1-1/2 cup servings

Ingredients

  • Flesh of one small seedless watermelon (about 5 cups)
  • 4 pitted medjool dates
  • 2 teaspoons fresh ginger, minced
  • 1/4 cup fresh lime juice
  • 10 large mint leaves
  • 3/4 teaspoon sea salt
  • 10 ice cubes

Instructions

  1. In a Vitamix or other high-speed blender, combine watermelon, dates, chia seeds, ginger, lime juice, mint leaves, sea salt and ice.
  2. Blend on high for 20 seconds. Divide between bowls and enjoy!
