Mix up your usual fruit or smoothie breakfast with this tasty gluten-free pudding/porridge recipe by Erin Bosdet of Simply Dish! This is a truly wholesome dish with an earthy flavor that will remind you of grain/oat based porridge. The addition of chia adds a nice protein and efa boost. Top with pomegranate, hemp seeds, cinnamon, a sprinkling of coconut sugar, or additional chia seeds and enjoy!

Ingredients
- 1c of soak buckwheat groats
- 1/2c of non-dairy milk (homemade almond!)
- 1 banana
- 1/4c of pumpkin (apple would work)
- 1tbsp of chia seeds
- 1tbsp of agave
- cinnamon
Instructions
Place all ingredients into your Vitamix and blend until smooth.
