We wanted to make a naturally sweetened milk that would be rich and creamy. so mixing coconut milk with a banana together came to mind. and this happens to fall in line with our Hawaiian theme breakfast bowl. Each bite is a mouthful of Hawaiian deliciousness…pineapple…coconut..mmm
Ingredients
- 1/2-3/4 cup raw buckwheat groats, soaked, and rinsed
- 1 cup fresh pineapple, sliced into pieces (whatever size you prefer)
- 1-2 tbsp chia seeds (optional just adds in more fiber and Omegas)
- 1-2 tbsp coconut flakes (for topping)
- 2 tsp coconut oil
coconut banana milk
- about 3/4 cup coconut milk
- 1-2 small – medium bananas (depending how sweet you like it)
- water if you would like to thin milk out (optional)
- 1/2 tsp coconut extract (optional)
- 1 tbsp or so of rum (optional)
Instruction
coconut banana milk
Place coconut milk with banana into blender and blend to smooth. add in additional flavorings if desired. and if you find the milk to0 thick for you liking, add in some water or more coconut milk to thin it out.
Once you have your coconut banana milk made and buckwheat groats soaked and rinsed. place your buckwheat into a bowl. pour as much milk as you would like over the buckwheat. add in your chia seeds.
Then top with pineapple slices and coconut flakes. and drizzle with coconut oil.
