Blackberry and Lemon Macaroons

Blackberry and Lemon Macaroons is a hands down crowd pleaser. The sweetness with the hint of sour on coconut will make your taste buds scream for more!


  • 2 C unsweetened coconut
  • .5 C almond flour
  • .25 C coconut oil
  • .5 C liquid sweetener of choice (clear agave, maple syrup)
  • .33 C mashed blackberries
  • 1 T lemon juice
  • few drops of lemon essential oil (could use extract)
  • zest from one lemon
  • dash of sea salt


In a large bowl, combine all ingredients. Using a small scoop, scoop out mixture and place on dehydrator tray – dehydrate for 4 hours at 105. Check often to make sure not to over dehydrate. Also, you could use your oven on the lowest setting, but check every 10 minutes not to over dry!
