This salad is high in beta carotenes, which are powerful antioxidants. It’s also full of flavor, fresh, yet also grounding since it’s made from a base of root vegetables. Raw food can be very easy to prepare (such as this salad!), and using minimal ingredients really allows the natural flavors of the fruits and veggies to shine.
- 1 large grated beetroot
- 1 large grated carrot
- juice of 1 orange
- 2 tbsp of flaxseed oil
- desiccated coconut to sprinkle on top
Mix all the ingredients together and enjoy as a side or a meal on it’s own!
